Non Dairy Zucchini Pie Recipe


Hubby can't eat dairy. We have had to modify lots of recipes over the years. My mom always made zucchini pies when we had an abundance of zucchini. We were always willing to eat it and all of its wonderful cheesy goodness. We have tried it many ways and this is the version that Hubby loves. I hope you enjoy it. 

3 cups diced, unpeeled zucchini
1 large onion diced
1/4 cup Go Veggie Parmesan topping
1/2 cup vegetable oil
1 cup Bisquick
3 eggs beaten
1 teaspoon parsley
1/2 jalapeno minced
salt and pepper to taste

Combine all the ingredients together. Spray a 9 inch pie plate and pour in. Bake at 350 degrees for 35 minutes or until lightly browned. 

*If you want it with dairy add 1/4 cup regular Parmesan cheese and 1/2 cup of shredded cheddar cheese. I usually make 2, 1 dairy, 1 non dairy. It always gets eaten.
