Peanut Butter Cookies

This is a very easy cookie recipe. It is gluten and dairy free so everyone in my family can enjoy it. We found this recipe when my YD was undergoing tests regarding her stomach. The doctor thought she may be allergic to gluten (she's not) so I went searching for good gluten free recipes. It is so good we use it anyway. I have everything in my pantry to make this. 1 cup creamy peanut butter 1/2 cup white sugar 1/2 cup brown sugar 1 teaspoon baking soda 1 teaspoon vanilla 1 egg Mix well. I make 12 big balls and then crisscross with a fork. Bake at 350 degrees for 12 minutes on a greased cookie sheet. I rotate the tray half way through the cooking time. Let them cool on the tray or they will break. Then take them off. *We have done some additions to this recipe. We have used chunky peanut butter with them. Do 1/2 chunky and 1/2 creamy as just chunky didn't hold together well. We have also added chocolate chips which makes the chocolate lover in me happy.  Enj...

We love to travel but we live on a  budget .  We have traveled to some wonderful places and made some great memories. And we didn't break the bank doing it. Here are some of our tips and tricks for a low cost vacation.  Part 1  is here.  * Cook. We always try to cook some of our meals when we go away. When we stay with family or friends this is never a problem. One of the great things about time shares and Airbnbs is that they have kitchens. Most hotels have rooms with a kitchen too. It may cost a little more up front but it is worth it. Dinner for 4 people at a decent restaurant is easily $60 a night. The room never costs that much more. If we can't get a kitchen, I bring my crock pot. I have never had a problem doing that. I just have to plan ahead. We also always try to stay at a hotel that offers some type of breakfast included. We just returned from visiting our oldest daughter in Baltimore. We love to visit her often but it can get expensive fast. We also enjoy traveling. However, paying for college and saving for retirement are important to us so we try to do it as affordable as possible.  So these are some of the ways that we do a low cost vacation. There are so many different options out there. You just have to be open minded. Don't just think hotel. Go outside that box. * Staying with family or friends. OD lives out of state. We like to go see her every few months. She shares a small 2 bedroom apartment in Baltimore. A hotel is easily $200 a night. We would not be able to visit often if we had to pay for a hotel. So we make it work. Hubby and I sleep in the small second room. It is a full bed but we deal with it. OD has a couch and a cot. We used to bring an air mattress before she got the cot. We usually only go for 3 nights max so we can deal with it. We have also stayed at our friend's c...
