Peanut Butter Cookies
This is a very easy cookie recipe. It is gluten and dairy free so everyone in my family can enjoy it. We found this recipe when my YD was undergoing tests regarding her stomach. The doctor thought she may be allergic to gluten (she's not) so I went searching for good gluten free recipes. It is so good we use it anyway. I have everything in my pantry to make this.
1 cup creamy peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon baking soda
1 teaspoon vanilla
1 egg
Mix well. I make 12 big balls and then crisscross with a fork. Bake at 350 degrees for 12 minutes on a greased cookie sheet. I rotate the tray half way through the cooking time. Let them cool on the tray or they will break. Then take them off.
*We have done some additions to this recipe. We have used chunky peanut butter with them. Do 1/2 chunky and 1/2 creamy as just chunky didn't hold together well. We have also added chocolate chips which makes the chocolate lover in me happy.
