Apple Cinnamon Syrup

We go through a lot of apples in our house. I have been making lots of apple/carrot juice lately. Since I hate to waste anything, I usually make apple cider vinegar with the cores. I have several containers so I tried making apple cinnamon syrup and it came out wonderful. I have already made it 3 times and we are almost done with the 2nd batch.  It is very easy to make.

Take the cores and put them in a pot with water covering them. Then boil for 30 minutes, making sure water is covering them the whole time. Then strain and measure the liquid. Discard the cores. I usually end up with about 2 cups of liquid. I add 1 cup of sugar, 2 teaspoons of lemon juice, and 1/4 teaspoon of cinnamon. I boil it down until it gets the consistency that I like. We have used it on waffles, pancakes, steal cut oats and vanilla ice cream. Hubby said it tastes like apple pie.

What do you do with your apple cores?

  1. Ooh, that's a fantastic idea! I never thought of that before. I made a batch of apple cider vinegar last year, but I'm going to have to do this next time. Thanks for the great idea!!!
